Add sliced tomatoes, then mozzarella cheese. Add 2-3 tablespoons of the premade pesto to the top of each chicken breast. Add chicken stock and garlic to the bottom of a baking dish. Store leftovers in the fridge for a few days or freeze. Drizzle olive oil over chicken breasts and season with salt and pepper. Increase the temperature to 400☏ and bake for another 5 minutes or until the cheese is slightly golden and bubbly. Top with the shredded mozzarella cheese and bake for 20 minutes. Mix well, then pour into a 9" x 13" baking dish that has been sprayed with nonstick spray. Add garlic to the bacon fat and cook until fragrant, about 30 seconds. Remove bacon reserving 1 tablespoon of bacon fat. Chop bacon and cook in a pan until crisp. Add broccoli to the pot and cook 2 minutes more.
